Paired with @cypressgrovers 🐐 goat’s milk ricotta, @froghollowfarm pears 🍐, marcona almonds, and a vinaigrette made with beautiful olive oil from @sognotoscanoimports and @sparrowlanevinegar fermented pear vinegar.

This is a fun little dish from tonight’s Christmas Eve menu.

This is a 5 day cured Duroc Pork Belly, rubbed with cilantro & garlic, air drying before roasting until that skin turned to glass, and that meat turned to 🧈.

@rancho_gordo deliciously creamy vaquero beans, finished with a touch of shallot & sherry vinegar.

The whole dish really coming together with a complex, but traditional escabeche. Made with carrots, fresno chile, jalapeno, garlic, mexican oregano, cinnamon, allspice, and cumin. Brightened with apple cider vinegar, and rounded out with a touch of sugar & olive oil.

Their work brings music, creativity, and self-expression into the lives of young people, fostering confidence, imagination, and connection through the arts. By creating space for exploration and creativity, the program helps students discover new ways to communicate, collaborate, and see the world around them.

We were grateful to host their incredible team and to celebrate the meaningful impact they make through arts education. Here’s to the educators and advocates who lead with passion and purpose - we’re honored to raise a glass with you at The Lark. 🥂
